Easy dinner: Parmesan Tilapia

I love fish for the most part but I get tired of the same old recipes that I have at home. Also with a two very picky eaters (my daughter and I ) at home I tend to stay safe and not try anything new for the most part. While browsing one of my daughter’s magazines I stumbled upon this easy tilapia recipe. I won’t lie the photo of the fish made me want to make it right away. The recipes is very easy and it’s done in 15 minutes, served with salad we had dinner in less than 20 minutes which I have to say is fantastic for this family of three.

 

 

Parmesan Tilapia

Makes 4 servings

Prep time: 10 minutes

Cook Time: 12 minutes

 

Ingredients

 

1/4 cup freshly grated Parmesan cheese

1 Tablespoon unsalted butter, melted

2 Tablespoons olive or canola oil

2 teaspoons lemon juice

Salt and pepper to taste

4 ( 4 ounce) tilapia fillets

 

1. Preheat oven to 400F and spray a foil- lined baking sheet with non-stick cooking spray.

2. In a shallow dish, combine the cheese, butter, oil, lemon juice, salt and pepper.

3. Place the tilapia on the foil-lined baking sheet. Spread cheese mixture over the top of the tilapia filets and bake for 10-12 minutes or until fish is opaque at the thickest part.

Our Summer To-do List

I have decided that I will dedicate this summer to hanging out with my daughter. If  you were to google a summer kids to-do list aka the summer bucket list, you will get lots and lots of results. Some of those results are more just a list of activities that you can do with your kids ranging in ages, and some are more specific. For example, I decided to make our own summer to-do list with things I have been wanting to do with my daughter. I have seen lists with 100 even 200 things on there but I decided to keep ours simple.

Our 50 things to do this summer list

 

1. Play with water balloons

2. Go on the big orange balloon ride

3. Cook something together

4. Bake cookies and decorate them

5. Bake cupcakes

6. Take Maddie to her first movie in the movie theater

7. See a movie at the park

8. Play dress up

9. Have a tea party

10. Write letters and snail mail them to friends and family

11. Picnic in the park

12. Visit 5 different parks that we haven’t been to before

13. Go to the beach and build sandcastles

14. Go swimming any chance we get

15. Watch the fireworks

16. Hike our canyon

17. Build something together

18. Go to the zoo

19. Build with Legos/blocks

20. Go to the bookstore and read a book or two

Also I am not afraid to change the list if needed. After all she is only almost a 3 year old.

First day of Summer

Today is the official first day of summer. Yay! One of the main reasons why I love living in So Cal is that there is a year round sunshine and we get to spend lot of family time outdoors. I remember growing up during the summer I would spend every single day at the beach, swimming and sun bathing, having those lazy summer days. Now life is completely different, trying to entertain a three year old.  Busy, busy, busy!

Bedside tables

Did you put too much thought when planning your bedroom?

Do you use a normal night stand?

 

When my husband and I first moved in together we had enough furniture to fill in a three bedroom apartment but no bedroom furniture. For three years we used a file cabinet and a storage ottoman for nightstands while our mattress was placed right on the floor. Then we moved in into a current home where we realized that we needed nightstands that provide lots of storage, so we used a small size dressers. Those dressers have been great and are the right height for our bed frame.

 

Now we have a problem at my mom’s new home. There is nothing there. No bed frames, no nightstands, no bedside lamps, just the mattress on the floor with bed linens of course. At least in three of the bedrooms there is overhead light, but unfortunately for my brother he has the room where you flip the switch to turn on a light that it’s plugged into the wall. While we are searching for cheap nightstands options his lamp is just hanging out on the floor.

 

I know that I can take a simple box or the paint bucket and turn into a nightstand, but honestly who would want to look at that. I love the different and non traditional ideas for nightstands that I was able to find.
